I recently started the South Beach Diet for health purposes and created this easy, healthy recipe that was really yummy without the guilt, fat or carbs!
Stuffed Peppers:
- Green peppers
- Sauteed chopped peppers
- Sauteed onions
- Sauteed plum tomatoes
- Meat Sauce
- Ground Chicken
- Ground Beef
- 2 Eggs
- Salt and Pepper for flavor
Beat eggs in a bowl, add sauteed peppers, onions and plum tomatoes. Mix, add raw meat, salt and pepper. Cut green peppers in half and scope mixture into each pepper. Place in a glass baking dish. Top with sauce. Bake 375 for 45 mins...add more sauce at the end and bake additional 10 minutes.
This is full of veggies, proteins and little to no carbs. Enjoy and cheers to healthy eating!
