Stuffed Peppers- Amazing and Easy to Make
I love stuffed peppers. Normally I am the only one who eats them but my little one is now a huge fan so I make them at least twice a month. This recipe is super easy and the two key ingredients to keep them soft and not dry is parmigiana cheese and sauce.
Stuffed Peppers Recipe:
8 medium green peppers
1 package of meatloaf meat mix
2 cups of sauce
1/2 cup of parmigiana cheese grated
Two eggs
2 tablespoons of breadcrumbs
Wash and slice peppers into two. Mix rest of ingredients (leave 1 cup of sauce aside) Stuff peppers with mixture. Bake at 375 for 45 mins. Top with remainder of sauce and bake another 10 minutes. Amazing!
Vegetable Soup Recipe For Kids
My little ones are sick and the easiest thing for me to do is make them some vegetable soup. If you know how to boil water then you will know how to make this soup. Super easy.
What You Need:
Pot of Water: 4-6 cups depending how much you want to make
2 Chicken Boulion- I like the Knorr big cubes
Frozen Vegtables
Two eggs
Pasta of your choice
Boil 4 cups of water. Add Boulion. Add pasta of your choice. I would add a quarter pound. I like to use pastina or orzo since small. Add cup of frozen vegetables of choice. I like the mixed frozen vegetables but if your child is picky then add what vegetable they enjoy. I would let boil 15-20 minutes so vegetables are extra soft easier for little ones to eat. Add two eggs at end. Mix with a fork so they break up well. Let simmer for another 5 mins.
