Roasted Fall Vegetables

I can't take 100% credit for this. I did add some things but really Blue Apron inspired me and it's so delicious. If you could imagine Fall being a food it would be this. Perfect for thanksgiving or to serve on the side with chicken or a roast or steak. Just delicious. 

What You Need:
3 medium potatoes
2 cups of brussle sprouts chopped
2 cups of chopped butternut squash
1 onion chopped
1 Apple chopped
Olive oil
Salt 


In a bowl add potatoes and butternut squash. Coat with olive oil and mix. Add salt. Spread out single layer on a baking sheet lined with aluminum foil. Bake at 425 for 18 minutes. Then add apples and onions and bake for an additional 10 minutes. 




Simply delicious. 

The Foliage In Connecticut Just Amazing!

I am on a kick with stopping and enjoying the foliage. My kids are cracking up over it. I always turn down the music and shout "look look, that tree is amazing!"

Sometimes I stop and take a picture. It's really taking a toll on me. It's really helping me smile more and enjoy the little things is life: Nature!
